The is the world's first double feremented chocolate - another innovation from French masters Valrhona.
Double fermented chocolate - with passionfruit: the deep aromas of the terroir - the chocolate characteristics - are brought out during the first fermentation of cocoa beans (all cocoa beans are fermented once to develop flavour).
However, what is special about this chocolate is it is double fermented. Pulp from locally harvested passionfruit is then added to the beans, and the sugar in the fruit activates a second fermentation that imbibes the chocolate with the fruit flavours and explains the hit of passionfruit you get from this chocolate.
