This bar is special. Starting with a very smooth, caramelised milk chocolate (47%) from Peru, Lucid Chocolatier adds Tonka bean to this chocolate which results in delicate notes of almond, nutmeg and vanilla against a milky, caramel backdrop.
What is the Tonka Bean?
The Tonka bean is virtually unheard of in Australia. Grown in the tropical regions of South America, particularly Mexico, they are prized by chefs and chocolate makers around the world (particularly the French who are known to have 'Tonka Fever') for the bean's 'mystical aromas' - think vanilla, almond, spice, cinnamon - and freshly cut grass.
When added to this chocolate, the Tonka beans accentuates the full bodied caramelisation of the bar.

These beans are sourced from: Amazonas department, Awajún community in the Amazon rainforest.
Cacao collected by the Awajun native community, originally from the Peruvian Amazon. Criollo variety cacao, fermented for 4 days in the village of Utt in wooden crates, covered with banana leaves and then dried in the same village.
